Gluten Free Egg in a Hole!

This is my homemade gluten free bread that I baked last week.    Cut out the hole with a very small glass or biscuit cutter and butter the bread and holes

I made bacon in the oven, the only way to go!  Just cover a large baking sheet with foil, lay out your bacon single layer and bake at 350 degrees until brown and crisp apx 30-40 min, careful don't burn!    Then I used a little of the bacon grease in my cast iron skillet.  Turn your pan on medium low or so.  My stove runs a bit hot so I keep have to keep my temp down so that the eggs will cook slowly and the bread will brown
 Here's the bacon done and draining on paper towels....does anything smell better?  I don't think so!

Place the bread and holes butter side down in the skillet and crack an egg in each hole.  What could be easier?  I used my white bread and my cinnamon bread and both were great.  Turn carefully with a large spatula and cook for a minute more.

Serve with bacon,  pure maple syrup or gluten free sugar free syrup and a glass of orange juice.  It was awesome!!
