20 min. Yeast-Free, Gluten-Free Italian Bread & Easy Mezzetta Olive Tapenade

My favorite holiday memories are of having lots of family and friends over for big meals. I love doing the cooking, preparing holiday recipes, the noise and laughter in the house, and of course, eating the food. I've happily adapted most of my old recipes to gluten-free but I had one more challenge. I was missing crusty chewy   Italian bread that I could make into Crostini! I've always loved warm toasted chewy bites of Italian bread at holiday parties. Topped with Tapenade or made into Bruschetta, they are my favorite appetizers, but I hadn't quite found the right gluten-free flour blend to achieve that wonderful chewiness, until now! The Best 3 minute Carrot Cake for two, gluten free, sugar free

A wonderful spiced carrot cake in just 3 minutes?  Yes! These are the best I have ever made and they are low carb and sugar free!  Many of the microwave cakes that I've made tasted eggy or spongy and even though they were good, they didn't taste like a cake.  These came out with a crumb! They make a perfect desert with a little whipped cream or frozen yogurt.  Yum!

Don't worry if your cake rises way up as it cooks!  It won't go over if you make sure that your batter only fills the coffee cup halfway.  Also, don't overcook.
Mine turned out perfect after 3 minutes, so depending on the power of your microwave, start with 2 minutes and touch the top of the cake with your finger.  If it's wet, go for another 30 seconds to a minute.  


Microwave Carrot Cake for Two, GF, DF, SF 

Ingredients:
  • 5 tablespoons almond meal, finely ground
  • 4 tablespoons oatmeal, finely ground (I used GF steel cut oats and ground it in my coffee mill)
  • 1 teaspoon gluten free cinnamon
  • 3 tablespoons your choice of sweetener
  • 1 teaspoon gluten free pure vanilla
  • 2 tablespoons unsweetened applesauce
  • 1 egg, beaten
  • 1 small carrot, finely grated or 6 tablespoons
Instructions:
  1. Mix all ingredients in a small bowl.  Your dough will be thick but wet
  2. Spoon EVENLY into two coffee cups. The batter should only fill the cup 1/2 way to leave room for expansion.
  3. Microwave both cups on revolving plate for 3 minutes or until a wooden stick comes out clean. Enjoy!
