This is the most satisfying lower calorie breakfast that I've had in a long time. I'm crazy about Dutch Baby pancakes and it had been quite awhile since I had one.
When cut into 4 even slices, the calories for one serving are the equivalent of eating one egg, one small pancake and 1/2 of an apple with a tiny bit of butter and syrup. (nice but a bit boring right?)
But this beautiful Gluten Free Dutch Baby is definitely not boring!
One of my New Year Resolutions is not to stress over carbs. Eating healthy, real food in moderation is much more important to me. Life it just too short to cut out all carbs! I know this from experience because I didn't eat carbs at all for almost 7 years. Yes, it works and I stayed skinny, but I wasn't healthy.
Eating small delicious gluten free meals, like this wonderful Dutch Baby, made with organic non GMO foods and getting more exercise is my goal. I don't eat processed foods or sugar for the most part, but again, I don't stress if I want to buy a gluten free cookie from the health food store or eat at a local gluten free restaurant. There are wonderful gluten free products made with healthy ingredients in the stores these days. Just be sure to read your labels!
People sometimes say to me "Making healthy gluten free food is time consuming and expensive!" I agree, it's a bit more expensive to eat healthy and it takes a little more time to cook from scratch, but it's so much better for us and tastes so good!
This year I will be sharing lots of recipes that are delicious, good for your body, economical and easy to make. I'll also be posting my new exercise routine!

Makes 1 large Dutch Baby Pancake
Serves 4
Ingredients:
Pancake batter:
- 2 tablespoons organic butter, room temp
- 4 large local eggs, room temp (my local eggs are med/large. If using big eggs, reduce to 3)
- 3/4 cup milk of choice
- 3/4 cup gluten free All-Purpose Flour with xanthan, I used gfJules Gluten Free non GMO All-Purpose Flour
Cinnamon Apples:
- 2 large organic apples, peeled, cored and thinly chopped
- 2 tablespoons organic butter
- 4 tablespoons organic pure maple syrup
- 1/4-1/2 teaspoon gluten free McCormick Cinnamon, or more to taste
- 2 tablespoons water, or more as needed
Instructions for Dutch Baby:
Preheat oven to 425 degrees F.
- Add the 2 tablespoons of butter to a large cast iron skillet. When the oven is ready, place the skillet and butter into the oven to heat. Don't let your butter burn.
- In a large blender or food processor, add the eggs and blend for one full minute on high. Add the milk and butter and blend to combine.
- Add the flour and continue blending for one more minute or until smooth. Mixture should be pourable but not too thick or too thin.
- If it's too thick add a tablespoon more milk and blend. If it's too thin add a tablespoon flour and blend until you achieve a pourable pancake batter consistency.
- Remove skillet from oven with a good pair of oven mitts.
- Pour the batter into the skillet as evenly as you can. Working quickly, use a spatula to spread out from the middle towards the edges.
- Put your mitt back on, return skillet to oven and bake for 20-25 minutes or until the top starts to brown. The pancake will puff up on baking and once removed from the oven fall back down in a few minutes.
- Slice, top with apples and dust with a little powdered cane sugar.
Instructions for Cinnamon Apples: Cook time 15-20 minutes
In a small skillet or sauce pan over medium heat, melt butter and add apples. Cook stirring constantly about 7-10 minutes.
Add cinnamon, maple syrup and water and simmer, stirring occasionally for 10 minutes or until tender and thickened, adding more water as needed.

ReplyDeleteI found that making homemade gluten-free food isn't any MORE time consuming than making regular food. Maybe because I've been cooking pretty much everything from scratch forever? Making anything from scratch takes time but it's so worth it :)
Sharon, I would love to link to your recipe but I couldn't find it. Thanks so much for alerting me to my incomplete sentence. I went back and reread it and I didn't finish my thought. I agree making homemade gluten free food isn't more time consuming than regular food, but because of the convenience of processed food, many people never learned to cook from scratch. So, for some it's not only a hard transition to go gluten free, but also to learn to cook from scratch. Things are changing though and it's great to see so many people cooking and wanting to learn. :)
