I use a 2 1/2 inch glass to cut out my rounds. Then I roll or press them out to 3 1/2 to 4 inches round before filling. 
You will love this gluten free pot sticker dough! It doesn't stick to the pan and it tastes incredible! We used the rest of the filling on romaine lettuce and it was wonderful. Perfect for those days when you don't have time to cook.

Makes 18 Pot Stickers and 8 Lettuce Wraps

Ingredients:

Homemade Gluten Free Pot Sticker Dough/Wonton Wrapper:
  • 2 cups gluten free flour mix - see recipe below for best results
  • 1 teaspoon xanthan gum (delete if your mix includes it already)
  • 3/4 cup hot water

Filling: Combine in a bowl and set aside

Gardein Beefless Ground is fully cooked so you can eat this raw on lettuce leaves or use it in your pot sticker dumplings without any worries.
  • 1 package (13.7 oz) Gardein Gluten Free Beefless Ground
  • 1 cup cabbage, finely shredded and diced
  • 4-6 medium mushrooms, minced
  • 1 clove garlic, minced
  • 3 tablespoons onion, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • 1/4-1/2 teaspoon Sriracha hot sauce, depending on how hot you like.
  • 1 tablespoon gluten free Tamari

Dipping Sauce: Combine in a bowl and set aside
  • 1/3 cup Gluten Free low sodium Tamari
  • 2 tablespoons rice vinegar
  • 2 tablespoons cane sugar
  • a few drops Sriracha to taste
  • tiny dash of sesame oil
  • 1/4 teaspoon fresh ginger, grated, opt
  • 1/4 cup water or vegetable broth as needed to taste

Instructions:
  1. In a large bowl combine the flour mix, xanthan gum if using and 1/2 cup of the hot water and stir until moistened. Add more water a little at a time, as needed, until you have a soft pliable dough. It will be a little sticky. Cover with plastic wrap and refrigerate for an hour.
  2. Remove  the dough from the fridge and pat into a ball. Place on rolling surface floured with glutinous rice flour. Knead several times until no longer sticky. Add a little more flour underneath if sticking.
  3. Flour rolling pin and roll out the ball to 1 inch thick. Using a small glass or biscuit cutter cut out rounds. Separate the excess dough and set aside to reuse. 
  4. Roll out each circle slightly, pick up, pat out more to thin, fill with one teaspoon filling and using both hands, like you are clapping, close the circle and gently press the edges together. Now starting at one end, give the edge a light twist to seal. Set on a plate and continue until all the dough is used.
  5. In a large heavy skillet heat several tablespoons of oil on medium high heat for a minute. Lay the pot stickers in a single layer in the pan. Cook for several minutes to brown. Add 1/2 cup water to skillet, cover and reduce the heat. Cook until water evaporates, remove the cover and cook until pot stickers are crisp.
Flour Blend:

1/2 cup gluten free tapioca starch
3/4 cup gluten free brown rice flour
3/4 cup gluten free glutinous sweet rice flour
