My favorite holiday memories are of having lots of family and friends over for big meals. I love doing the cooking, preparing holiday recipes, the noise and laughter in the house, and of course, eating the food. I've happily adapted most of my old recipes to gluten-free but I had one more challenge. I was missing crusty chewy   Italian bread that I could make into Crostini! I've always loved warm toasted chewy bites of Italian bread at holiday parties. Topped with Tapenade or made into Bruschetta, they are my favorite appetizers, but I hadn't quite found the right gluten-free flour blend to achieve that wonderful chewiness, until now! This easy and delicious gluten free 10 Minute Microwave Sweet Potato Pie recipe was inspired by  the simple ingredients in the NEW Nature Valley Gluten Free Simple Nut Bars. Nature Valley Nut bars are made with only 7 wholesome ingredients and come in two great flavors!

I wanted to make my pies the same way with just a few healthy ingredients and use these awesome chewy nut bars for the topping. I've always believed that eating simple natural foods that have just a few ingredients is the best way to live gluten free. It's pretty great that Nature Valley believes that too!

For the filling I used fresh sweet potatoes, one of nature's best sources of vitamin A.

For the topping I used the Nature Valley Simple Nut ALMOND, CASHEW & SEA SALT Bar made from roasted almonds, roasted cashews, honey, tapioca syrup and roasted sunflower seeds. They taste like they are wrapped in chewy caramel. I knew they would be perfect for my pie topping and they were incredible!

Chopping up these beautiful bars was hard to do, but it saved me so much time and gave the pies  texture, a bit more sweetness and I love the sea salt!

10 Minute Microwave Sweet Potato Pies

Makes 4 mini pies

Ingredients:
2 large (apx 1.5 lbs) sweet potatoes, cooked
4 tablespoons unsalted butter
1/3 local honey
1/2 cup coconut milk
2 large eggs
1 teaspoon gluten free cinnamon
1/4 teaspoon gluten free 5 spice
1 teaspoon pure vanilla extract
1 tablespoon coconut flour
3 Nature Valley Simple Nut Bars, finely chopped
Instructions:
  1. Wash and pierce the sweet potatoes several times. Place potatoes on a paper towel and microwave for 15-18 minutes or until soft.
  2. Set potatoes aside to cool a bit. When potatoes are cool enough to touch, peel off skins and scrape the meat into your food processor or mixer.
  3. Add the butter and honey and mix, add the coconut milk and mix, add the eggs, cinnamon, spices, vanilla and coconut flour and mix until smooth. Your filling should be the texture of thick pudding.
  4. Spoon into microwave safe ramekins, filling them 3/4 of the way full. Mine held almost a cup each. Sprinkle the top of each pie with chopped Nature Valley Simple Nut Bars.
  5. Place ramekins on the floor or rotating plate of your microwave and cover with parchment paper or wax paper.
  6. Cook on high for 9-10 minutes or until they have risen to the top, pull away from the sides and are firm but a little sticky to the touch.  Adjust cooking time depending on the size of your ramekins. My first sample was only 1/2 cup and I microwaved it alone. It only took one minute.
  7. Remove pies from microwave and let sit to finish setting. Can be eaten warm or cold!
  8. Serve with whipped cream.
