Skinny Gluten Free Low Glycemic Carrot Cake, grain free

I make this wonderful sugar free and gluten free carrot cake each year for our Easter celebration and it always comes out moist and delicious. It's a healthy and nutritious low carb that takes hardly any time at all to make.  The secret is in the raisin sauce. Normally, I don't like the taste of raisins or dates in my baked goods, but oh my, it works perfectly and tastes incredible. To top it off, I used organic  rainbow carrots from local growers and I think they made this cake even better.

Incredible Low Carb, #GrainFree Bread in the Bread Machine

It's such a joy when the weather cools off and I can start baking bread again. Today my house is filled with the wonderful smells of fresh baked grain free bread and Progresso soup bubbling on the stove.

SOFT, low carb, grain-free & gluten free bread in the Bread Machine.
Nothing is better than dipping warm bread into a big bowl of soup. Today I made Progresso Rich & Hearty New England Clam Chowder and guess what? It's #glutenfree!

I grab my soup and bread, curl up with a book on the patio and savor the coolness of a beautiful Fall day. #FallSoupSeason is my favorite time of year! Hurry to take advantage of Progresso at Publix in-store promotions and enter my $15 Paypal Cash Giveaway below!

Just pop my new grain free bread in the bread machine or the oven, heat up your cans of Progresso New England Clam Chowder, make a big green salad and you have a perfect dinner for a chilly Fall evening.

When I was younger, I loved Fall in the Northwest. Bundling up in heavy sweaters and boots, taking long drives through the mountain passes to see the changing colors, picking apples for our horses and taking my daughter to the pumpkin patch. Of course coming back to that warm cup of Progresso soup while you carve up your pumpkins is the best part!

Now, in our new home, we go to the beach. The waves are high and the surfers are out. We love Fall because it's cool enough to set up our chairs on the beach and enjoy the whole day.

Fall is a bit slower coming to my area. The leaves are just starting to turn.

Soon the fruit will be ripe on the trees. We have oranges, grapefruit, avocados and papayas. Have you guessed where I live yet?

Make the following changes:

Add 1/4 teaspoon baking soda
Delete dry milk
Use warmed milk of choice instead of water
Use xanthan gum (It does make a better bread, but feel free to use psyllium if you can't tolerate gums)
Replace Chia seed in recipe with Golden Flax seed, ground to a fine flour
Decrease Seed flour by 1/4 cup
Increase Almond flour by 1/4 cup
