It's such a joy when the weather cools off and I can start baking bread again. Today my house is filled with the wonderful smells of fresh baked grain free bread and Progresso soup bubbling on the stove.
Nothing is better than dipping warm bread into a big bowl of soup. Today I made Progresso Rich & Hearty New England Clam Chowder and guess what? It's #glutenfree!

When I was younger, I loved Fall in the Northwest. Bundling up in heavy sweaters and boots, taking long drives through the mountain passes to see the changing colors, picking apples for our horses and taking my daughter to the pumpkin patch. Of course coming back to that warm cup of Progresso soup while you carve up your pumpkins is the best part!
Now, in our new home, we go to the beach. The waves are high and the surfers are out. We love Fall because it's cool enough to set up our chairs on the beach and enjoy the whole day.
Fall is a bit slower coming to my area. The leaves are just starting to turn.
Soon the fruit will be ripe on the trees. We have oranges, grapefruit, avocados and papayas. Have you guessed where I live yet?

It's so easy to make and has the softest texture of any of my grain free breads. It slices perfectly and is great toasted too!
You can make it in your Bread Machine or in the oven. All of the instructions are in my Chia Bread recipe below.

Incredible Low Carb, #GrainFree Golden Bread in the Bread Machine
This amazing, SOFT, grain-free bread is a NEW version of my popular Chia Bread in the Bread Machine. After months of testing, I can shout it to the world, this bread is incredible!

Make the following changes:
Add 1/4 teaspoon baking soda
Delete dry milk
Use warmed milk of choice instead of water
Use xanthan gum (It does make a better bread, but feel free to use psyllium if you can't tolerate gums)
Replace Chia seed in recipe with Golden Flax seed, ground to a fine flour
Decrease Seed flour by 1/4 cup
Increase Almond flour by 1/4 cup

ReplyDeleteThe clam chowder is definitely my favorite! I had some in a restaurant a few days ago and I do believe they left the clams out. It was not thick and chunky like Progresso.

ReplyDeleteLove the clam chowder but I have to have my whole wheat bread. It's so heart healthy, but probably not the butter I put on it. It probably cancels that out. ;) it's neat that you can make this in a bread machine.
