Christmas was wonderful, exhausting, and so exciting at our house this year. I hope yours was wonderful too.
We decided with only a few weeks before the holidays to remodel the kitchen. We had a bad water leak and the cabinets were ruined. I can't imagine a worse time to do a remodel, but it was totally worth it! I love so many things about the new kitchen, especially my beautiful Pfister Stainless Steel Selia 1-Handle Pull Down kitchen faucet. I can't wait to tell you about it!
And don't miss my new super Easy Gluten-Free English Muffin Bread recipe. It's the last one of the year and it's a doozy!
This is a gorgeous faucet. Right out of the box, I was impressed with the size and how solid it feels.
It's contemporary design is the perfect compliment for my modern two toned kitchen and I love that the Pfister Pforever Warranty covers finish and function for life.
My biggest gripe with our old faucet was the fingerprints and spots. I hate fingerprints and spent half my life in the kitchen wiping that old faucet down.
I've had the new Pfister faucet for several weeks now and I am thrilled to say that I never have any spots or fingerprints. It stays beautiful with hardly any cleaning.
Now I've told you my favorite pros- the beautiful design with stainless steel finish that doesn't spot, heavy quality construction, easy clean spout, easy connections, lifetime warrranty and a great soap dispenser.
Are there any cons? We had a little trouble with the pull down spout snapping back, but it turned out that the weight was impeded by the water lines. Once we moved the lines the weight could pull the faucet back into position! Just be sure that nothing under the sink gets in the way of the weight and it will work great.

Now on to my new Easy Gluten Free English Muffin Bread! I was so excited to get back in the kitchen and do some baking, but I was out of most of my flours...so I used my favorite whole grain hot cereal and ground it to flour. It turned out great! The little bits of corn give this bread the perfect crunchy crust that I wanted and the chewy holy texture is amazing fresh or toasted.

The pull down is easy to use and has a 2 function button on the back for a strong spray or stream. The soap dispenser is awesome too! It has a large dispenser bottle that holds a lot of soap. |
Our plumber said the connections were great and easy to install. It only took 15 minutes! |

Bob's Gluten Free Mighty Tasty Hot Cereal ingredients are Whole Grain Brown Rice, Corn, Sorghum and Buckwheat. I ground it down to flour in my coffee mill!
Easy Gluten-Free English Muffin Bread
Author-Ali Williams
Ingredients: All ingredients need to be room temp.
- 2 cups (measure after grinding) Bob's RedMill Gluten Free Mighty Tasty Hot Cereal, ground to flour in a coffee mill, sift and regrind.
- 1 cup tapioca starch
- 1 tablespoon rapid rise or instant dry active yeast
- 1 tablespoon xanthan gum
- 1 1/2 teaspoons salt
- 1 cup warm water
- 4 large eggs, warmed
- 1 heaping tablespoon local honey
- 1/4 cup olive oil
- 1 teaspoon apple cider vinegar
- Warm your water while running it over your eggs in a small bowl.
- Measure the warm water and reserve 1/4 cup to set aside. Mix 3/4 cup of warm water, honey, if using, vinegar, eggs and olive oil together in the large bowl of your stand mixer.
- Combine the flours, yeast, xanthan gum and salt in a separate bowl.
- Add the dry ingredients slowly to the mixer bowl and beat for 2 minutes. This develops the "gluten". Add the reserved 1/4 cup water if it is too dry. The dough should be very soft and sticky, like thick cake batter, but not runny.
- Turn the batter into a large well greased or parchment lined bread pan.
- Brush the top of the dough very lightly with olive oil.
- Let rise in a warm location for 30 minutes or until it reaches almost to the top of the pan.
- Bake at 400 degrees for about 12-15 minutes. The top should be nicely browned. Cover with foil and bake an additional 10-15 minutes or until firm to the touch and the interior temperature is 200 degrees.
