20 min. Yeast-Free, Gluten-Free Italian Bread & Easy Mezzetta Olive Tapenade

My favorite holiday memories are of having lots of family and friends over for big meals. I love doing the cooking, preparing holiday recipes, the noise and laughter in the house, and of course, eating the food. I've happily adapted most of my old recipes to gluten-free but I had one more challenge. I was missing crusty chewy   Italian bread that I could make into Crostini! I've always loved warm toasted chewy bites of Italian bread at holiday parties. Topped with Tapenade or made into Bruschetta, they are my favorite appetizers, but I hadn't quite found the right gluten-free flour blend to achieve that wonderful chewiness, until now! I'm so excited to share my NEW 20-minute Gluten-free, Yeast-free, Egg-Free, and Xanthan Gum-Free Italian Bread Rolls with you and did I say, they only take 20 minutes? No yeast, no rising and so easy to make. This amazing dough is also perfect patted out thin for flatbread or pizza crust. Scroll down to see my new Pizza crust u

Pfister Faucet Review & Easy Gluten-Free English Muffin Bread

I received this product for a review but all opinions are my own.
Christmas was wonderful, exhausting, and so exciting at our house this year. I hope yours was wonderful too.

We decided with only a few weeks before the holidays to remodel the kitchen. We had a bad water leak and the cabinets were ruined. I can't imagine a worse time to do a remodel, but it was totally worth it! I love so many things about the new kitchen, especially my beautiful Pfister Stainless Steel Selia 1-Handle Pull Down kitchen faucet. I can't wait to tell you about it!

And don't miss my new super Easy Gluten-Free English Muffin Bread recipe. It's the last one of the year and it's a doozy!

Pfister Selia Stainless Steel 1-Handle Pull Down Faucet is incredible!
This is a gorgeous faucet. Right out of the box, I was impressed with the size and how solid it feels.
It's contemporary design is the perfect compliment for my modern two toned kitchen and I love that the Pfister Pforever Warranty covers finish and function for life.
My biggest gripe with our old faucet was the fingerprints and spots. I hate fingerprints and spent half my life in the kitchen wiping that old faucet down.
I've had the new Pfister faucet for several weeks now and I am thrilled to say that I never have any spots or fingerprints. It stays beautiful with hardly any cleaning.

The pull down is easy to use and has a 2 function button on the back for a strong spray or stream. The soap dispenser is awesome too! It has a large dispenser bottle that holds a lot of soap.
Our plumber said the connections were great and easy to install. It only took 15 minutes!

Features for Selia 1-Handle, Pull-Down Kitchen Faucet

Selia harmoniously combines traditional and contemporary styling with just the right balance of classic charm and contemporary chic. The Selia collection of versatile bath and kitchen faucets is perfect for any home improvement project, whether quick kitchen update or full remodel.
  • Pforever Seal - advanced ceramic disc valve technology with a never leak guarantee
  • High arc spout for added clearance and reach
  • Installs with or without deckplate
  • Includes top filling, matching soap dispenser
  • Spout swivels 360 degrees for maximum maneuverability
  • Pfister Pforever Warranty® covers finish and function for life
  • 1.8 gpm @ 60 psi
Now I've told you my favorite pros- the beautiful design with stainless steel finish that doesn't spot, heavy quality construction, easy clean spout, easy connections, lifetime warrranty and a great soap dispenser.

Are there any cons? We had a little trouble with the pull down spout snapping back, but it turned out that the weight was impeded by the water lines. Once we moved the lines the weight could pull the faucet back into position! Just be sure that nothing under the sink gets in the way of the weight and it will work great.

My kitchen is gorgeous now with two toned cabinets, granite, glass doors, pull outs and my awesome Pfister Selia faucet
Here's the before!
And here's the after!
Perfect for sandwiches or toast with jam and so easy to make!
Now on to my new Easy Gluten Free English Muffin Bread! I was so excited to get back in the kitchen and do some baking, but I was out of most of my flours...so I used my favorite whole grain hot cereal and ground it to flour. It turned out great! The little bits of corn give this bread the perfect crunchy crust that I wanted and the chewy holy texture is amazing fresh or toasted.

Easy Gluten-Free English Muffin Bread
Author-Ali Williams

Ingredients: All ingredients need to be room temp.
Instructions: Preheat oven to 400 degrees F. Grease and flour a 10 x 5 inch large bread pan. Mine has 4 inch sides.
  1. Warm your water while running it over your eggs in a small bowl.
  2. Measure the warm water and reserve 1/4 cup to set aside. Mix 3/4 cup of  warm water, honey, if using, vinegar, eggs and olive oil together in the large bowl of your stand mixer.
  3. Combine the flours, yeast, xanthan gum and salt in a separate bowl.
  4. Add the dry ingredients slowly to the mixer bowl and beat for 2 minutes. This develops the "gluten". Add the reserved 1/4 cup water if it is too dry. The dough should be very soft and sticky, like thick cake batter, but not runny.
  5. Turn the batter into a large well greased or parchment lined bread pan.
  6. Brush the top of the dough very lightly with olive oil.
  7. Let rise in a warm location for 30 minutes or until it reaches almost to the top of the pan.
  8. Bake at 400 degrees for about 12-15 minutes. The top should be nicely browned. Cover with foil and bake an additional 10-15 minutes or until firm to the touch and the interior temperature is 200 degrees.
Enjoy! See you next year with lots more recipes, decorating and great products. Happy New Year!
