This is the first gluten-free loaf in 2 years that came out just like "real bread". What a thrill it is to have soft, moist, tender Gluten Free bread from my bread machine! It smells and tastes amazing, with a thin crisp crust and a tender holey texture. The bacteria in yogurt that has incubated for 24 hours eats the lactose and makes it safe for my digestion. I love making it in the Crock Pot and it works like a charm. I get thick tangy lactose free Greek yogurt (or is it yoghurt?) for a fraction of the price in the store. I buy a gallon of organic milk with no growth hormones for $3.25. I use 3/4 of the gallon of milk, so say $2.25, plus about 1/2 of a cup of my last batch's yogurt for starter. You can also use a good commercial plain yogurt with live cultures or a dry starter. Depending on how long you drain the yogurt, you will finish with a little more than half the original weight of your milk in yogurt. In 2005 I was diagnosed with Hashimoto's Thyroid disease and in 2010 I started tackling the challenges of living gluten-free. It's been fun, pull your hair out frustrating, but slowly I've healed. Really Good Low Carb Gluten Free Bread, bread machine & xanthan free option

The lower the carbs the better in my book! That way I can eat more! I adore gluten-free bread, but I also love my jeans, so I've been working hard to make a Low Carb bread that tastes great and it even has a soft holey crumb ! My new Low Carb Gluten Free Bread tastes so good and you can make it without xanthan gum! It works great in the oven or the Bread Machine. Can't have flax seeds?
